Tangy Jhal Muri without sev, chaat masala and peanuts.

Hi everyone! I’m a big fan of puffed rice squeezed with lemon, so what could be a perfect snack to make than Jhal muri?


Jhal muri is a North Indian snack made with puffed rice, peanuts, sev and vegetables of your choice. You can also skip sev and chaat masala if It’s unavailable and peanuts if you’re allergic.


It‘s a crunchy comfort snack that contains all the essential nutrients.

Puffed rice contains carbohydrates, vitamin A and vitamin C, minerals like Thiamin, iron, riboflavin and niacin, peanuts are rich in protein.


In this recipe I'm using roasted chickpeas instead of peanuts, which is rich in plant based protein and is also cheaper. The vitamin C and folates present in onions and tomato and carotenoids in carrots provides a vital nutrient boost.

For fat content I’m using olive oil at the end which makes it very healthier than other saturated fat like butter, coconut oil or palm oil.

Let’s make this crispy snack using ingredients that are available at home. If you don’t have chaat masala, don’t lose hope, you can still use alternate seasoning like cumin powder, coriander powder or even garam masala.

Ingredients:

1. Puffed rice – 1 cup

2. Roasted chickpeas - 1 tbsp

3. Onion – 1 medium. If large, use 3/4.

4. Tomato – 1 medium

5. Carrots – 1 medium

6. Juice of 1 lemon

7. Olive oil – 1 tbsp

8. Cumin powder – ½ tsp

9. Pepper powder- ½ tsp

10. Salt as required

11. Coriander leaves – few for garnishing.

Method:

Chop onion, carrot, tomato into fine pieces.


Take a wide bowl and throw in all the chopped vegetables. Wide bowl makes it easy for mixing


Now add cumin and pepper powder for flavour.

Add puffed rice and mix well.

Cut lemon in half and squeeze it's juice without any seeds


Drizzle olive oil (or any oil)


Add salt


Mix everything so that the lemon juice and olive oil binds well


Add coriander leaves for garnishing


And Jhal muri is ready with your 'at home' ingredients

Eat it ASAP because puffed rice will get soggy quite after some time.
