Easy Chicken Fried Rice


Prepare this yummy chicken fried rice recipe just with the ingredients you have at home. I was short on vegetables, I didn’t have any vegetable in the refrigerator, so I went on with the stuff I had at home – chicken and eggs! (pictorial recipe below)

Chicken fried rice is a dish that doesn’t need a side to go with and it's done in a single wok/pan. Not many utensils are utilized.

I didn’t include any vegetable in this recipe, not even onions, garlic and tomatoes. I used a substitute of onion powder and garlic powder instead.

Some veggies like bell peppers, carrots, spring onions and peas brings in a great deal of deliciousness and nutrients to the rice, so add it on if you have.

Some useful tips:

  • Make sure to use Basmati rice or any medium to long grain rice.

  • Make sure to cook the rice Al Dente or firm to bite, don’t let it go mushy or overcooked.

  • Marinate and deep fry the chicken before adding it to the rice, as it brings extra flavour to the recipe.

  • Sprinkle pepper powder at last, as it enhances the flavour even more.

Ingredients:

For fried chicken

1. Boneless chicken – 250 gm

2. Paprika/chilli powder – 2 tbsp

3. Salt as required

4. Oil – for deep fry

For fried rice

1. Basmati rice – 250 gm

2. Eggs – 3

3. Onion powder – 2 tsp

4. Garlic powder – 2 tsp

5. Pepper powder – 1 tsp

6. Soya sauce – 2 tbsp

7. Green chilli sauce – 1 tbsp

8. Tomato sauce – 1 tbsp

9. Oil – 3 tbsp

10. Salt as required

Recipe:

1. Rinse basmati rice thoroughly in water and cook it in 3-4 cups of water. Cook it al dente (firm), not sticky or mushy.

2. Drain the rice in a colander and allow it too cool well.

3. Meanwhile, marinate chicken pieces with chilli powder or paprika powder and salt until the rice gets done.

4. In a small pan, heat oil in high flame.

5. Add in marinated chicken pieces and fry it under low to medium flame.

6. Under 10 mins the chicken pieces should be done. If time exceeds, chicken might become hard.

7. Remove it from the pan to a plate. Cut the chicken pieces with a knife into even smaller pieces, so that it’s easy to eat. Keep aside.

8. Now in a pan or a wok, add oil and crack in eggs.

9. Scramble the eggs and make sure it doesn’t get burnt on the bottom.

10. Add onion and garlic powder.

11. Slit in green chilli.

12. Mix well.

13. Now add in the fried chicken pieces.

14. Add in the soya, green chilli and tomato sauces. These sauces gives the rice a restaurant-cooked taste. You can add any other extra sauces of your liking too.

15. Add salt as required and mix well

16. Add in the cooked basmati rice, sprinkle pepper powder and mix well without breaking the grains.

17. Turn off heat and serve hot.
