Curd Rice Fritters

Curd rice fritters is a unique South Indian snack inspired by Ms Kani from a Tamil cooking show called Cook with Comali.


Curd rice fritters are made by deep-frying balls of curd rice that are stuffed with a pinch of pickle, rolled in a bed of crushed pappad and bread crumbs. This is a very easy recipe and can be done within 20 mins. If you have leftover rice and wondering what to do with it, this delicious snack will help you win the day.

Ingredients:


Leftover boiled rice - 1 cup

Curd - 2 tbsp

Ginger - 1 inch

Mustard seeds - 1 tsp, dry red chilli - 2 nos and oil - 1 tbsp for seasoning.

Coriander leaves - one handful

Pickle - 1 tbsp

Bread crumbs - 4 tbsp

Pappad - 2 nos

Oil for deep frying

Place the leftover rice in a bowl and add the curd



Mix it thoroughly and make sure the mixture is rigid and not loose/flowing.


Adding too much curd will make the batter difficult to roll into balls.

Now heat oil in a separate bowl and splutter mustard seeds and red chilli.


Add the seasoning onto the curd rice mixture.


Now add along with this the cut ginger pieces and the chopped coriander leaves.

Start rolling small balls by smearing little drops of oil in your palm.


Make a well in the ball and add a small amount of pickle in the middle and roll it into a smooth ball.


Firm curd rice balls are done

Now coat the balls in a slurry made by mixing plain flour and water,

and roll it in a bread crumb-pappad mixture.


Ensure thorough coating on all sides.

Deep fry the balls in low to medium heat for six to seven minutes.


The scrumptious curd rice fritters are ready to be devoured!


Crunchy on the outside and soft and chewy on the inside!
