Eid is never complete without Biryani, so this time, try out your ever-favourite soul-food with Beef.
Beef Biryani is a Queen's feast. Just like any other biryani, it's easy to make and delicious. A funny story is, I thought I was cooking Lamb until later I found out (which was after the whole dish was completed) that I had been cooking Beef. But it wasn't regretting at all. Beef is an excellent source of protein, iron, potassium and sodium.
It was so delectable and aromatic, thought I'd share the recipe with everyone.

Ingredients
For Marination
1. Beef - 300 gm (pressure cooked with 1 tsp turmeric and 2 tbsp ginger garlic paste)
2. Curd/Yogurt - 200 ml
3. Ginger and Garlic paste - 2 tbsp
4. Chilli powder - 2 tsp
5. Biryani masala - 2 tsp
6. Coriander powder - 1 tsp
7. Cumin powder - 1 tsp
8. Garam masala 1/2 tsp
9. Pepper powder - 1/2 tsp
10. Salt as needed
For cooking
1. Rice - 400 gm
2. Onion - 2 large
3. Tomato - 2 medium
4. Green chilli - 2
5. Oil - 3 tbsp
6. Ghee - 3 tbsp
7. Cardamom - 3
8. Clove - 2
9. Cinnamon - 2
10. Coriander leaves - few
11. Mint leaves - few
12. Lemon juice - 1 tsp
13. Food colour - a pinch
14. Salt as needed
Method
Pressure cook beef:
1 Cook beef with turmeric, ginger garlic paste, salt and water in pressure cooker until it becomes soft and chewy.
2. save the broth after it's done
Marination:
1. Marinate Lamb/Goat meat by adding curd or yogurt, ginger garlic paste, all the masalas and salt.
2. Set aside until we prepare other things
Cooking:
1. In a narrow bottomed pan, add oil and ghee and fry the spices (cardamom, cloves and cinnamon)
2. Now fry the onions until golden brown and keep aside ¾ th of it separately
3. Add in tomatoes and cook until soft
4. Add the chillis
5. Now add the marinade
6. Add in the meat broth
7. Cook under high flame until water evaporates and you get a thick gravy
8. Turn off flame
Cook rice:
1. Soak basmati rice before hand
2. Now boil rice with cardamom, cloves and cinnamon.
3. turn off flame when the rice is 75% cooked
Layer biryani:
1. Layer the beef gravy, basmati rice, fried onions and mint+coriander leaves alternately one above the other.
2. After layering, add ghee on top
3. Now place a strong pan preferably iron on the bottom and place the biryani dish on top
4. Cover it with a lid and place weight on top for Dum
5. Cook for 30 minutes under low flame till the gravy and rice gets blended thoroughly
Incredibly delicious and aromatic Beef Dum Biryani is done topped with a generous amount of ghee.

now add in the marinade
add the broth and squeeze in lemon
cook under low flame until a thick gravy is formed
separate some of the gravy, leaving some on pot
soak and boil basmati rice
now layer the biryani, by placing gravy
then rice
then onions
...gravy and herbs
then repeat
add food colour and topple with ghee
place a heavy bottomed pan underneath the pot and cover it with a heavy lid or place weight above the lid
30 minutes on Dum and it's done!
Beef Biryani is ready to be devoured!
